The Snow Day That Wasn’t

Happy Sunday from a freezing cold Atlanta!

I am 100% positive that yesterday and today are the coldest day we have had since last winter aka today is the first day Joel and I have (reluctantly) had to use the heat in our apartment. All week, we had been anticipating a winter storm to come through late Friday night/early Saturday morning. The weather channel said we were expected to get about 3-4 inches of snow.

When we woke up yesterday morning and peaked out the window – all we seemed to have gotten was a whole bunch of freezing rain and ice. The brittle trees were all covered in icicles but there was no snow to be found. Not that I was very disappointed considering I am not a fan of the cold and/or snow.


We started our morning with a workout together. I am loving our new Saturday routine we have. With Joel’s job, he normally has work on the weekends but the last couple he has had off which has been great. We started the workout with a mile run warm up before completing an Upper Body Circuit. It was a great way to start the day (aka being lazy for the rest of the day).

We ran a few errands before relaxing on the couch to binge watch our latest Netflix obsession – How To Get Away With Murder.

We recently made a commitment to make a meal together one night a week (which typically falls on Saturday night). The combination of Joel’s job often has him working some nights + our different dietary preferences has led us to be on our own for dinners most nights. We are creatures of habit and typically eat most of the same foods everyday. So in an effort to change up our routine (and to teach Joel how to cook), we have made an agreement to cook something different/or eat out once a week. This sounds silly, but so far it has been great + has been a great date night for us every weekend.

Last weekend we made Lettuce Tacos! This weekend is breakfast for dinner. I could seriously eat breakfast foods and biscuits everyday, all day long if I let myself. On the menu for tonight is an egg white/spinach scramble (for me – I haven’t gotten Joel on the egg train yet), Applegate Chicken & Apple Sausage and PANCAKES!!!

I literally cannot remember the last time I had pancakes – it was honestly those pre-made frozen ones sometime in high school.

Joel was quite the pancake making pro.

Bet you can’t guess which plate is mine…

And cookies… because why not. My neighbor back home makes THE best chocolate chip cookies every holiday season. My mom was nice enough to send Joel and I a few of them in the mail this week. 🙂

2 0 1 7 !


I cannot believe it is already 2017! I feel like it was just yesterday that Joel and I were watching football, cuddled up on the couch with our pup bringing in 2016. I may just feel that way because it is exactly how we brought in 2017 the other night as well… creatures of habit, no?

2016 has been without a doubt one of the best years I have had to date. Here is why –

  • Joel moved to Atlanta! – After 4 years of long distance (8+ hours between the two of us), Joel and I finally are living in the same city. This hasn’t happened since my Junior year of high school and I am so excited about it. Joel graduated college back in May and packed up his few belongings (a trash bag of clothes) and moved in a few days after his final exams. It has been a learning experience for the both of us and we are still learning everyday – living with a boy, let alone another person is always a challenge. But through the troubles, have come LOTS of fun times and memories with my boy.
  • My job & the best of friends. You are probably thinking this is an odd combination and for most people, it is. – but I truly have met some of my best friends through my current job. I have been working for my company since August 2015, but transitioned into my current role back in March 2016. Through this, I have met some of my best friends. From birthday’s, brunches, concerts, happy hours, engagement parties, weddings – we have done it all this year. As for my job and beginning my career, I have learned so much about myself and am continuing to grow professionally and personally. I am so excited for what is to come in the next year!
  • My health and running. I am so fortunate to be able the ones to wake up in the morning and say that I “get” to run. I started out 2016 by impulsively signing up for a half marathon with my dad in February…for a half marathon that was in March. Now, don’t get me wrong, up until that point I had been running. I have always wanted to run a half marathon but didn’t have the confidence in myself to think I could do it – so what better way to do it than to just sign up on a whim? Right? …Besides the fact that I had never ever ran more than 6-7 miles in my life. 🙂 I talk about this a little more here. After this half marathon, I ended up hurting my IT band and was out of running for a good 3-4 months, I think. This is hard for someone that likes to be as active as I do. I recovered finally, and have since then stuck to shorter races and increasing my speed – which led me to my 5K PR in October! My whole point of this little rant is that I am SO fortunate that I get to get up everyday and do something that I enjoy and am healthy enough to do.
  • Family. I have always been close to my parents and my sister, but I think as I have gotten older the closer we have become. Especially being 5 hours apart and the fact that I don’t get to see them as often as I would like, I really try to call and text them more than I would have in the past. They have been the best support system through everything and am so fortunate for them! BUT breaking news – my sister is moving to ATL in a week!

There are many more other things that I was thankful for this year, but I will leave it at that. 🙂

Money Doesn’t Buy Happiness – or Does It?

The past month alone has been such a whirlwind – of good, bad and a few come to Jesus meetings.

For starters, before Joel graduated and moved to Atlanta, we had life figured out. Or so we thought. Joel would move to Atlanta, he would apply to Physical Therapy school here, he would complete school and start working and we would live happily ever after with our little family.

Well as you can probably assume – things do not always go as planned. Three days before he was scheduled to take his GRE, he decided he didn’t want to be a Physical Therapist. It wasn’t something that made him happy or excited to go to work everyday. A career in the health field was something he felt like he had to do, something that would support a family, bring in enough money to buy all of the things we want and to have a happy life.

He slowly figured out (slowly as in spent his whole college career working towards this only to change his mind days before the GRE) that he wasn’t happy with this choice and that he had been working so hard towards it for all the wrong reasons.

When making his final decision, he was a little apprehensive because he didn’t want to let anybody down (i.e. me, my parents, his parents) or be a disappointment for not going on his so called directed path and making X amount of salary. I could honestly not even believe what was coming out of his mouth when he said this. So many people – me included – feel the pressure to do a certain thing or go down a certain path in order to be considered “successful”.

I have told him so many times that I would much rather him chose a career that he is going to be happy with and not be miserable every day going to – it isn’t about the money. Maybe it is to some people – but that is a personal decision we all have to make. Yes it is nice to have that large paycheck coming in every week, but with most jobs that comes with time and experience. Would you rather have a job that pays super well and absolutely hate going to work everyday and be miserable during your one life or have a job that pays good enough at the moment and love going to work every day. You spend a large percentage of your day at work – why not do something you enjoy?

Joel is currently in the process of figuring things out with his new career choice – stay tuned until everything gets figured out. I can already tell that he is 100 times happier with this choice than he was when he was planning to go to physical therapy school and that is what makes me the happiest.

Summer has always been my absolute favorite season for all of my life. So you can imagine how sad I was when I realized that last summer was my last real summer. Last August I entered the 8-5, M-F, real world and unfortunately that means… no more summers off.

I would love being at home during the summer – getting to sleep in, work out, go shopping, hangout with friends, be lazy, work a part time job, hangout by the pool and go to the beach whenever I wanted to. Sounds like a pretty good gig, eh? Good bye to the good ole days! I now have 2 whole days (aka Saturday and Sunday) to do all my favorite summer activities – and living in Atlanta makes it pretty hard to do my most favorite – the beach.

I was long over due for a trip to the beach so this past weekend came at the perfect time. Joel, Oxford and I packed up the car after I got off of work and headed to the coast. For as much as I wanted to get out of the little town of Beaufort, SC when I was growing up – it sure is nice to go back now that I am older.

I spent the whole weekend with my family and loved every minute of it. Luckily, we had Monday off because of the 4th of July and then I took an extra day so we were able to stay a lot longer than the typical one full day trip.

Saturday was spent running errands around town with my mom, hanging out by the pool and cooking tacos with Dad. Sunday was the day I was looking forward to the most. My mom, sister and I packed up a cooler and some beach towels and headed to Fripp Island for the day! I could seriously just lay on the beach all day – and that is exactly what I did. After heading home, we got ready and headed to a cookout with Joel’s family.


Since Joel and I grew up in the same town – our parent’s houses are only about 10 minutes away. This makes weekend trips home and holidays SO easy and great.

Monday was spent relaxing and hanging by the pool. We introduced Oxford to the pool and she absolutely loved it and didn’t want to get out! She is such a little human child.


Monday night was spent eating hamburgers and watching fireworks from our window – lucky for us our neighbor does his own full fireworks show so we get the whole view from an upstairs window. So much better than crowds and bugs!


The older I get, the more appreciative I am for my parents, sister and home. I will jump on any chance to get to spend time with them. I’m not sure what it is growing up but I know every one goes through the “parents are the worst people in the world phase” from ages like 13-18. Once you hit 20 you join the “parents are the best people in the world let me call my mom 5 times a day because she knows everything and I don’t know anything you were right help me phase “. I am definitely in the second phase and my parents have been my absolute saviors when it comes to all things real world – like nobody teaches you how to file taxes or how to switch the car title from your dad’s name to your name in college. (None of the above is very fun, in case you were wondering). Parents make all those scary things not as scary!

I don’t know how people manage being thousands of miles away from their families – 4 hours is plenty for me. The more time I spend in the big city, I realize that my heart is definitely in SC!

What Nobody Told Me About Living With a Boy

He will test your patience (in a good and bad way – I am very impatient, so I am working on this 🙂 )

Your grocery and water bill will go up (Because frankly, boys eat and shower A LOT – at least this particular boy does…like who showers before a work out?)

Boys are really really messy i.e. you will know exactly where said boy has been and what he did

He will leave peanut butter on the lid of the jelly – still don’t know how this one happens

He will spill beer and leave his dip on your nice new tan couch (and leave a stain)

He will make you laugh until you cry

You have your own adventure buddy 24/7 and someone to take along on all the errands you run

He will be your own personal trainer for your 5 am workouts

He will be the best grocery shopping partner (he will push the grocery cart and carry all the bags to prove how strong he is…and then drop your apples on the concrete (read: bruise your apples before you even arrive home))

You will annoy him when you pester him about his To Do list

He will leave his wet towel on your floor – or even better, on your bed

He will let the dog out when it gets dark outside (You will learn to pull the “it’s dangerous” card on him but really you are just too comfy on the couch to move)

He will ultimately force you into getting a bigger bed because you, him and the dog cannot quite sleep comfortably on a full size bed (this is good and bad…bad because how are little pads of fluff you sleep on maybe 8 hours a day so expensive????)

He will make you watch Jeopardy with him every night at 7:30 and get mad when you get more answers right than he does 🙂

And you will love every minute of all of it.

Fast, Easy, Healthy Breakfast Ideas

Breakfast is probably one of my favorite meals of the day. I could easily eat some sort of breakfast food for every meal – and a lot of days I do.

One of my favorite breakfasts that is great at home or can easily be packed up for work are Greek yogurt bowls. I love these because you can change them up in so many different ways + tailor them to whatever you have on hand or are feeling that day.


My go-to combination is shown above. I typically use the Dannon Light and Fit Greek Yogurt in Vanilla or the Plain Oiko’s Greek Yogurt. I chose these two brands mostly because they are two of the highest in protein/lowest in sugar.

I add fruits such as strawberries, blueberries, blackberries or bananas. When I visit home, I am spoiled because my mom keeps the fresh berries stocked – but when I am on my own I normally buy frozen ones which are just as good.

My favorite part is the crunch – I add sliced almonds or walnuts to up the protein.

Some other of my quick go to’s are:

  • Eggs (Scrambled, hard boiled or an omelette – I normally use one whole egg with egg whites) with veggies and fruit
  • RX Bar (My new favorite – a bar with only a few ingredients & packed with protein) + Banana
    • Bars are a good quick alternative to making a breakfast, but I try to keep an eye on the ingredient list and sugar content – you would be surprised just how many ingredients and sugar they can pack into a tiny little bar.
  • Oatmeal with frozen berries (I like mixing in a little Vega Protein Powder or PB 2 to increase the protein)

And for a little fun – Brunch is a whole different ball game. I eat very healthy through out the week but always love to splurge every now and then. Brunch and hotel breakfasts are my jam.


When eating out, I try to incorporate some kind of protein. I love eggs but never make omelettes for myself at home, so that is normally what I get. I keep it simple with just adding in things like tomatoes, spinach and peppers – with no cheese.

After getting in my protein, I add in the fun by splurging on my sides. Roasted potatoes and biscuits are my weakness – especially those at West Egg Cafe in Atlanta, GA.

Training Update 1


Up until this past week, Oxford had not had any sort of formal training. We did however teach her the most important things – sit and paw. 🙂 Except that wasn’t cutting it when we would bring her to the park and she would chase after every human and dog.

I don’t think this pup has ever met a person or animal she did not like…even if they didn’t like her back. Point blank, our dog needed some obedience training (which is mainly my fault for not beginning sooner, she was just so cute and all I wanted to do was snuggle her).

Exhibit A

For example, she loves to grab things that aren’t hers and make you chase her around in circles for ten minutes. By no means is she a bad dog, she is just a puppy and is a little hard headed and doesn’t always listen (like her father) sometimes.

So I scheduled training with a local trainer – 8 sessions for a pretty penny. Low key hoping this lady is like Cesar Millan dog whisperer.

We had our first session last Tuesday. One of the main topics of discussion was the fact that Oxford sleeps in the bed with us. Also note that I have a full sized bed…i.e most nights I am hanging off the side of the bed.

Ms. Dog Trainer suggested that we start teaching Oxy to sleep in her bed on the floor. Ok – great idea (in theory).

Step One: Make dog sleep in crate beside bed with door locked for a couple nights

Step Two: Put dog in crate with door shut but not locked

Step Three: Dog sleeps in crate with door open

Step Four: Replace crate with dog bed and dog sleeps on floor by herself MAGIC!! Dog sleeps by herself on the floor.

Easy peasey, right? Wrong-o. Maybe in a perfect world… Let’s recap on how this really went for us:

Step One: Put pup in crate next to our bed at around 9:30 (yes, we are early birds).

  • From approximately 9:30 PM – 5:00 AM, puppy cries and barks on and off. I think I got a total of 3 hours of sleep this night.
  • Still on step one obviously – Night 2. Put pup in crate around 9:30 PM.
  • Remove puppy from crate at around 11 PM. Can. Not. Do. It. Crying, barking, trying to dig her way out. We were beyond frustrated (and sorry neighbors). We gave up.

Lets also note that after each night while I was getting ready for work, said pup would walk into her crate – BY HERSELF – lay down and sleep IN HER CRATE. You couldn’t have done that during the night????

Soo. We have our next dog training session on Tuesday. I am not quite sure how we are going to tell Ms. Dog Trainer that we failed on this homework assignment…hopefully all the other things we have been practicing with her make up for it.
